Ingredients:

[li]1 cup polenta[/li]
[li]3 cups water[/li]
[li]1 tablespoon olive oil[/li]
[li]3 cloves garlic, minced[/li]
[li]red chili flakes, to taste[/li]
[li]salt and pepper, to taste[/li]
[li]4-5 leaves kale, chopped[/li]
[li]1.5 cups mushrooms, sliced[/li]
[li]1 Quarter Pound Original Sunshine Burger patty, cut into small pieces[/li]
[li]2.5 roma tomatoes, sliced[/li]
[/ul]

Directions:

[li]Place the polenta and water in a microwave safe bowl and heat for 7-8 minutes (stirring frequently) until it has thickened.[/li]
[li]Heat the olive oil in a medium saucepan. Sauté the garlic, salt and pepper and red chili flakes until they are golden brown. Add the mushrooms and kale and sauté for 2-3 minutes or until tender. Heat the Sunshine Burger patty.[/li]
[li]Add the veggie mix, tomatoes, and Sunshine Burger patty to the polenta and stir. Enjoy![/li]
