Serves: 4

 

Ingredients:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 medium red onion, chopped
  • 1 tablespoons red chili flakes
  • Salt and pepper to taste
  • 6-8 kale leaves, chopped
  • 2 cups mushrooms, sliced
  • 1 Garden Herb Sunshine Burgers Patty
  • 8 tablespoons Spicy Red Pepper Hummus or Cilantro & Lime Tofu Spread
  • 4 whole wheat pitas

 

Directions:

Preheat oven to 400°.

Heat olive oil in a medium pan.  Add garlic, onion, chili flakes and salt and pepper and heat for 1-2 minutes until garlic starts to brown.  Add kale and mushrooms and sauté for 3-4 minutes.

Warm the Sunshine Burger patty and crumble.  Spread hummus or cilantro & lime spread on the pitas. Top with kale and mushroom mixture and Sunshine Burger crumbles.

Bake for 25-30 minutes. Enjoy!
