Sunshine Powerhouse Super Salad

Ingredients
3 Sunshine Burgers
Salad
1 head of romaine lettuce torn into pieces (put aside four of the outer leaves for the salad dressing)
1 diced or sliced bell pepper of your favorite color
1/2 medium size cucumber sliced
1 cup of your favorite sprouts
(opt) a few thin slices of purple onion
(opt) a small handful of raisins
Salad Dressing
4 outer romaine lettuce leaves
1/3 cup olive oil
1/2 cup water
2 cloves of fresh peeled garlic
2 TB soy sauce
1/2 medium size cucumber diced
1 cup fresh chopped parsley (packed into cup)
Preparation
Toss salad ingredients together and serve on serving plates or large soup bowls.
Blend all the dressing ingredients except lettuce and parsley in a blender until smooth. Add lettuce and parsley. Blend again. Add more soy sauce or garlic to taste. Drizzle over salad.
Heat the Sunshine Burgers (See instructions on box) and cut into finger size pieces and place on top of your super salads
