Hempfest Breakfast with tofu scrambler
In a large mixing bowl place:
- One 14 oz extra firm square of tofu
- One teaspoon of turmeric
- And salt and pepper to taste
Mash together with a fork or potato masher and set aside.
Put together in a small fry pan:
- One tablespoon of olive oil
- One chopped bell pepper
- One large chopped shallot
Sauté’ with a lid for about 5 minutes occasionally stirring.
Add these cooked veggies to the bowl of tofu and stir.
In a larger fry pan add:
- One Tablespoon of olive oil
- The tofu and veggie blend
Fry till slightly browned for about 10 minutes.
While this is cooking wipe out the small pan and heat some breakfast patties on low.
Cut up some fresh fruit to put on the plates and serve!
